All the emails are located in /langs/en_US.lang.php (or whatever languages you primary work in).
For reservation email, you'll be looking for this to start at $email['reservation_activity_1']
If you need to change variables that are passed in, you'll need to modify lib/Reservation.class.php send_email() as well.
